Bring a pot of water to a boil and cook the soba noodles according to the package instructions (usually about 6-8 minutes). Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
In a separate pot, bring water to a boil and add the edamame. Cook for about 5 minutes or until tender. Drain and rinse under cold water.
Slice the cucumber into thin strips and the spring onion into thin rounds. Also, prepare the julienne carrot if not already done.
In a large mixing bowl, combine the cooked soba noodles, edamame, sliced cucumber, julienne carrot, and spring onion.
Add the sesame dressing to the mixing bowl along with 1 tsp of salt. Toss everything together until well combined.
Sprinkle sesame seeds over the salad and give it a final toss.
