Ingredients

  • 200 g Soba noodles
  • 200 g Shelled edamame
  • 1 large julienned Carrot
  • 0.5 julienned Cucumber
  • 1 tbsp Sesame oil
  • 1 tbsp Rice vinegar
  • 1 tbsp Soy sauce
  • 1 tsp, grated Fresh ginger
  • 1 tbsp Toasted sesame seeds

Instructions

Bring a pot of water to a boil. Add the soba noodles and cook according to package instructions, usually about 5-7 minutes, until al dente.

While the noodles are cooking, prepare an ice bath. Once the noodles are done, drain them and immediately transfer them to the ice bath to stop the cooking process and cool them quickly. Drain well and set aside.

In the same pot, bring fresh water to a boil and add the shelled edamame. Cook for 3-4 minutes until tender. Drain and rinse with cold water to cool.

In a large bowl, combine the soba noodles, edamame, julienned carrot, and julienned cucumber.

In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, grated ginger, salt, and pepper to create the dressing.

Pour the dressing over the noodle mixture and toss gently to combine and coat everything evenly.

Sprinkle the toasted sesame seeds over the salad and toss lightly one more time. Adjust seasoning with additional salt and pepper if necessary.

Serve the salad chilled or at room temperature, enjoying as a refreshing side or light main dish.
