Cook the soba noodles according to the package instructions. Drain and set aside.
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and honey or mirin to make the sesame sauce.
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast pieces. Season with salt and black pepper to taste.
Stir-fry the chicken for about 5-7 minutes, or until fully cooked and no longer pink. Remove from the skillet and set aside.
In the same skillet, add another tablespoon of oil. Add the mixed stir-fry vegetables and stir-fry for about 3-4 minutes until they are tender-crisp.
Return the cooked chicken to the skillet with the vegetables. Pour the sesame sauce over the chicken and vegetables. Stir to coat everything evenly.
Add the cooked soba noodles to the skillet. Toss them with the chicken, vegetables, and sesame sauce until everything is well combined and heated through.
Remove from heat and garnish with sliced green onions and toasted sesame seeds.
