Heat a non-stick skillet over medium heat and add the sesame oil. Once hot, add the cubed tofu and sauté until golden brown on all sides, about 6-8 minutes.
While the tofu is cooking, in a small bowl mix the soy sauce and rice vinegar to create a dressing.
Once the tofu is browned, add the soy sauce and rice vinegar mixture to the pan. Stir well to coat the tofu evenly, then remove from heat.
In a bowl, place the cooked brown rice as the base. Layer the tofu on top of the rice.
Arrange the steamed spinach or bok choy and sliced scallion over the tofu and rice.
Sprinkle the sesame seeds over the top to finish.
Serve immediately. Enjoy your nutritious and satisfying breakfast bowl!
