Crack the eggs into a bowl. Add a pinch of salt and pepper and whisk until well combined.
Heat a non-stick skillet over medium heat and add the olive oil.
Add the baby spinach to the skillet and sauté for 1-2 minutes, until wilted.
Pour the beaten eggs into the skillet with the spinach. Allow to sit for a few seconds before gently stirring with a spatula.
Continue to cook the eggs over medium heat, stirring gently, until they are just set but still slightly runny, about 3-4 minutes.
Add the smoked salmon and cherry tomatoes to the eggs and gently fold in to combine. Cook for another minute, until everything is warmed through.
Remove from heat and serve immediately. Garnish with a squeeze of lemon juice from the lemon wedge, if desired.
