Crack the eggs into a bowl and season with a pinch of salt and pepper. Whisk until well combined.
Heat the olive oil in a non-stick skillet over medium heat.
Add the cherry tomatoes and cook for 1-2 minutes until they start to soften.
Add the spinach to the skillet and cook for another 1-2 minutes until wilted.
Pour the beaten eggs into the skillet. Gently stir with a spatula to scramble, cooking until just set, about 3-4 minutes.
Remove the skillet from the heat and gently fold in the smoked salmon pieces.
Transfer to a plate and serve with a lemon wedge on the side, if using. Enjoy your meal!
