Crack the eggs into a large bowl and add the salt and pepper. Whisk until the eggs are well beaten and the mixture is frothy.
In a large pan or skillet, melt 1 tablespoon of butter over medium heat.
Add the fresh spinach to the pan and sauté for about 2-3 minutes until it's wilted. Remove from the pan and set aside.
In the same pan, melt the remaining tablespoon of butter over medium-low heat.
Pour the egg mixture into the pan and let it set for a few seconds. Use a spatula to gently stir and fold the eggs until they are softly scrambled but still creamy.
Add the sautéed spinach and smoked salmon to the eggs. Gently fold them into the eggs and cook for another minute or until everything is heated through.
Toast the sourdough bread slices to your desired level of crispness.
Serve the scrambled eggs with spinach and smoked salmon on top of the toasted sourdough slices. Garnish with extra black pepper if desired.
