Start by slicing the avocado in half, remove the pit, and scoop the flesh into a small bowl. Gently mash it with a fork until smooth and set aside.
Chop the smoked salmon into bite-sized pieces and set aside.
In a large bowl, beat the eggs until the yolks and whites are fully mixed. Season with salt and pepper to taste.
Heat 1 tsp of olive oil in a non-stick skillet over medium heat. Add the fresh baby spinach. Cook the spinach, stirring occasionally, for about 2-3 minutes until it is wilted. Remove the spinach from the skillet and set aside.
In the same skillet, heat the remaining 1 tsp olive oil over medium-low heat. Add the beaten eggs to the skillet, stirring gently and continuously with a spatula until they form soft, creamy curds.
Once the eggs are scrambled to your desired consistency, remove the skillet from heat. Gently fold in the chopped smoked salmon and avocado into the scrambled eggs.
Serve the scrambled eggs with the wilted spinach on the side. Garnish with optional chopped chives and a lemon wedge if desired.
