Crack the eggs into a bowl, add a pinch of salt, and a dash of pepper. Beat well with a fork until combined and slightly frothy.
Heat the olive oil in a non-stick pan over medium heat.
Add the cherry tomatoes to the pan and sauté for 1-2 minutes until they start to soften.
Add the baby spinach to the pan and sauté for another 1-2 minutes until wilted.
Pour the beaten eggs into the pan, over the spinach and tomatoes. Cook gently, stirring with a spatula, until the eggs are just set but still creamy.
Tear the smoked salmon into bite-sized pieces and gently fold into the eggs. Cook for an additional 30 seconds until the salmon is just warmed through.
Serve immediately with a lemon wedge on the side, if using. Enjoy your scrambled eggs with spinach and smoked salmon!
