Preheat the oven to 400°F (200°C).
Cut the bell peppers into strips, the zucchini into rounds, and the eggplant into small cubes.
Place the cut vegetables on a baking sheet. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt and black pepper.
Roast the vegetables in the preheated oven for 20-25 minutes, stirring halfway through, until tender and slightly caramelized.
While the vegetables are roasting, rinse and drain the chickpeas if using canned. Set aside.
In a large bowl, combine the cooked quinoa, chickpeas, and roasted vegetables.
Crumb the feta cheese and add it to the salad.
In a small bowl, whisk together the juice of 1 lemon and the remaining 2 tablespoons of olive oil to make the dressing. Add salt and pepper to taste.
Pour the dressing over the salad and toss well to combine.
Chop the parsley and sprinkle over the salad before serving.
Serve the salad at room temperature or chilled. Enjoy!
