Ingredients

  • 1 cup (170 g) quinoa (dry)
  • 2 cups (480 ml) water or low-sodium vegetable broth (for cooking quinoa)
  • 1 15 oz can (about 240 g drained / 1 1/2 cups) canned chickpeas, drained and rinsed
  • 1 medium (about 200 g / 1 1/2 cups diced) English cucumber, seeded and diced
  • 1 cup (about 150 g) cherry tomatoes, halved
  • 1/4 cup (about 40 g) red onion, finely diced
  • 1/2 cup packed (about 30 g) fresh flat-leaf parsley, chopped
  • 4 oz (about 113 g / 1 cup crumbled) feta cheese, crumbled
  • 3 tablespoons (45 ml) extra-virgin olive oil
  • 3 tablespoons (about 1–2 lemons / 45 ml) fresh lemon juice
  • 1 teaspoon lemon zest (optional but recommended)
  • 1 clove garlic, minced (optional)
  • 1 teaspoon (plus more to taste) kosher salt
  • 1/2 teaspoon (or to taste) freshly ground black pepper

Instructions

1

Rinse the quinoa: Place the dry quinoa in a fine-mesh sieve and rinse under cold running water for 30–45 seconds, rubbing it between your fingers. This removes the natural bitter coating (saponin) and prevents a soapy aftertaste.

2

Toast and simmer the quinoa: In a small saucepan over medium heat, add 1 teaspoon olive oil (or a quick spritz) and the rinsed quinoa. Toast, stirring, for 60–90 seconds until it smells nutty — toasting deepens the quinoa’s flavor. Add 2 cups water or low-sodium vegetable broth and 1/4 teaspoon salt, bring to a gentle boil, then reduce to low, cover tightly and simmer for 12–15 minutes until the water is absorbed.

3

Rest and fluff the quinoa: Remove the pot from heat and let it sit, covered, for 5 minutes. This steaming phase finishes cooking gently and prevents gummy quinoa. Uncover and fluff with a fork to separate the grains; then spread the quinoa on a large plate or baking sheet to cool faster — you want it warm or room temperature when you toss the salad so it doesn’t wilt the vegetables or melt the feta.

4

Prepare the dressing: In a medium bowl, whisk together 3 tablespoons extra-virgin olive oil, 3 tablespoons fresh lemon juice, 1 teaspoon lemon zest (if using), minced garlic (optional), 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper. Whisking emulsifies the oil and lemon juice so the dressing coats the quinoa and vegetables evenly.

5

Build the salad base: In a large mixing bowl combine the drained, rinsed chickpeas, diced cucumber, halved cherry tomatoes, and finely diced red onion. Adding the heartier ingredients first makes it easy to fold in the quinoa and dressing without crushing delicate items.

6

Combine quinoa and dressing: Add the warm or room-temperature quinoa to the bowl with the vegetables. Pour the dressing over the mixture and toss gently but thoroughly so each grain is glossy with dressing — warmth helps the quinoa absorb flavors, and tossing rather than stirring prevents vegetables from releasing too much juice.

7

Add herbs and feta: Fold in the chopped parsley and crumbled feta cheese, leaving some feta to sprinkle on top for presentation. The parsley adds herbal brightness; folding the feta in at the end preserves its creamy texture and prevents it from becoming over-softened by lemon and salt.

8

Adjust seasoning and rest: Taste and adjust salt, pepper and lemon as needed. Let the salad rest 10–15 minutes at room temperature to allow the flavors to marry; the salad can also be chilled for up to 2 hours before serving for a more set flavor.

9

Serve: Transfer to a serving bowl, top with the reserved feta and a small drizzle of olive oil, and garnish with a few parsley sprigs and an extra twist of cracked black pepper. Serve as a light main, a hearty side or pack it for lunch — it keeps well for 2–3 days refrigerated.

Chef's Tips

  • 1Cook quinoa in broth and toast it first to add depth—this takes the flavor from neutral to nutty and savory without extra effort.
  • 2Cool the quinoa quickly by spreading it on a sheet pan; hot quinoa will steam and soften vegetables and cheese too much, changing the texture.
  • 3If using canned chickpeas, rinse and drain them well and pat dry with paper towels — removing excess liquid prevents a watery salad and concentrates their flavor.

Variations

  • Make it vegan: Omit the feta and stir in 2 tablespoons toasted pine nuts or sliced almonds for crunch and a touch of richness. Add 1/4 cup chopped sun-dried tomatoes for umami.
  • Add roasted vegetables: Toss 1 small diced zucchini and 1 small diced red pepper with a little olive oil, roast at 425°F (220°C) for 12–15 minutes until caramelized, then fold into the salad for a warm-roasted note.
  • Protein boost: Swap half the quinoa for farro or add 4 oz grilled chicken or salmon for a higher-protein main dish.
