Ingredients

  • 2 cups (cooked) Quinoa
  • 2 cups Canned or cooked chickpeas
  • 2 whole Bell peppers
  • 1 medium Zucchini
  • 1 small Eggplant
  • 4 oz Feta cheese
  • 3 tablespoons Olive oil
  • 1 whole Lemon
  • 1/4 cup (chopped) Parsley
  • to taste - Salt
  • to taste - Black pepper

Instructions

Preheat the oven to 400°F (200°C).

Chop the bell peppers, zucchini, and eggplant into bite-sized pieces.

In a large bowl, toss the chopped vegetables with 2 tablespoons of olive oil, salt, and pepper.

Spread the vegetables on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly charred.

While the vegetables are roasting, rinse and drain the chickpeas if using canned. Set aside.

In a large serving bowl, combine the cooked quinoa, chickpeas, and roasted vegetables.

Crumble the feta cheese and add it to the salad.

In a small bowl, whisk together the juice of one lemon, 1 tablespoon of olive oil, and chopped parsley. Season with salt and pepper to taste.

Pour the lemon and parsley dressing over the salad and gently toss to combine all ingredients.

Serve the salad chilled or at room temperature, and enjoy!
