Ingredients

  • 2 pieces chicken breast
  • 1 medium onion
  • 1 medium green bell pepper
  • 2 medium tomato
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

Slice the chicken breasts into thin strips. Season with salt and black pepper.

Chop the onion, green bell pepper, and tomatoes into bite-sized pieces.

Mince the garlic cloves.

Heat the olive oil in a large skillet over medium-high heat.

Add the minced garlic and sauté for about 30 seconds until fragrant.

Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

In the same skillet, add the chopped onion and green bell pepper. Cook until they start to soften, about 3-4 minutes.

Add the chopped tomatoes and cook for another 2-3 minutes until they start to break down.

Return the chicken to the skillet and add soy sauce and red pepper flakes (if using). Stir everything together and cook for another 2 minutes.

Adjust seasoning with additional salt and pepper if needed. Serve hot.
