Dice the chicken breasts into bite-sized pieces. Season with salt and pepper.
Peel and slice the carrots and potatoes into thin rounds. Chop the onion and garlic finely. Dice the tomatoes.
Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned on all sides, about 5 minutes.
Add chopped onion and garlic to the pot. Sauté until the onion is translucent, about 3 minutes.
Add sliced carrots and potatoes to the pot. Stir well to combine.
Pour in the vegetable broth and bring to a simmer. Cover and let cook for 10 minutes.
Add the pasta and diced tomatoes to the pot. Stir well and cook for an additional 12-14 minutes, or until the pasta is al dente and the vegetables are tender.
In a small bowl, beat the eggs and slowly add them to the pot while stirring continuously to create a creamy sauce.
Adjust seasoning with more salt and pepper if needed. If using, stir in parmesan cheese until melted and combined.
Serve hot, garnished with additional parmesan cheese or fresh herbs if desired.
