Heat the olive oil in a large pot or Dutch oven over medium-high heat.
Add the beef cubes and sear until all sides are browned, about 5 minutes. Remove and set aside.
In the same pot, add the onions and carrots. Cook until the onions become translucent, about 4 minutes.
Return the beef to the pot. Add the beef broth, thyme, and bay leaf. Season with salt and pepper.
Bring to a boil, then reduce heat to a simmer. Cover and cook for about 1 hour, or until the beef is tender.
While the stew is cooking, place the diced potatoes in a pot and cover with water. Add a pinch of salt. Bring to a boil over high heat, then reduce to a simmer. Cook until potatoes are tender, about 15 minutes.
Drain the potatoes and return to the pot. Add butter, milk, and salt to taste. Mash until smooth and creamy. Adjust seasoning as desired.
Once the beef is tender, adjust seasoning in the stew as needed. Remove the bay leaf before serving.
Serve the hearty beef stew hot, alongside creamy mashed potatoes.
