Ingredients

  • 150 g lean stewing beef
  • 1 medium carrot
  • 200 g potato
  • 1 medium onion
  • 1 cup beef broth
  • 1 tsp olive oil
  • 1/2 tsp thyme
  • 1 small bay leaf
  • 30 g butter or milk for mash
  • to taste n/a salt
  • to taste n/a black pepper

Instructions

Peel the potato and chop it into even-sized chunks for boiling. Place in a pot of cold water and bring to a boil.

Once boiling, reduce heat to a simmer and continue cooking until the potatoes are tender, about 15 minutes.

While potatoes are cooking, heat olive oil in a heavy-bottomed pot over medium heat.

Add diced onion to the pot and cook until softened, about 3-4 minutes.

Add the stewing beef to the pot and brown all sides, about 5-6 minutes.

Peel and slice the carrot, then add to the pot with thyme and bay leaf.

Pour in the beef broth, bring to a simmer, and cover the pot. Cook for about 20 minutes, stirring occasionally.

Once the potatoes are tender, drain and return them to the pot. Add butter or milk and mash until smooth, adding salt and pepper to taste.

Serve the beef stew over a bed of mashed potatoes. Enjoy warm!
