Start by preparing the mashed potatoes. Boil the diced potatoes in salted water until tender, about 15 minutes.
While the potatoes are cooking, heat 1 tablespoon of olive oil in a large pot over medium heat. Add the beef cubes and sear until brown on all sides, about 5 minutes. Remove the beef from the pot and set aside.
In the same pot, add the onions and cook until translucent, about 3 minutes.
Add the carrots, thyme, and bay leaf to the onions. Stir well to combine.
Return the beef to the pot, and pour in the beef broth. Season with salt and black pepper to taste. Bring to a boil, then reduce heat to low, cover, and let simmer for about 45 minutes.
Once the potatoes are tender, drain and return them to their pot. Add 1 tablespoon of butter and 1/4 cup of milk. Mash until smooth and creamy. Season with salt and black pepper to taste.
After the stew has simmered for 45 minutes, check the tenderness of the meat and vegetables. Adjust seasoning if necessary. If the sauce is too thin, let it simmer uncovered for an additional 5 minutes to thicken.
To serve, place a generous scoop of mashed potatoes onto each plate and ladle the beef stew over the top. Enjoy your hearty meal!
