Ingredients

  • 4 pieces pork chops
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 medium onion
  • 2 tablespoons dijon mustard
  • 1 tablespoon maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup chicken broth

Instructions

Preheat the oven to 400°F (200°C).

Mince the garlic cloves and finely chop the onion.

In a small bowl, mix together the Dijon mustard, maple syrup, minced garlic, salt, black pepper, and dried thyme.

Heat olive oil in a large ovenproof skillet over medium-high heat. Sear the pork chops on both sides until golden brown, about 3-4 minutes per side.

Remove the pork chops from the skillet and set aside. Add the chopped onion to the skillet and sauté until translucent, about 5 minutes.

Pour in the chicken broth and stir to deglaze the skillet, scraping up any browned bits from the bottom.

Return the pork chops to the skillet, and spoon the mustard mixture over each chop.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).

Remove from the oven and let the pork chops rest for a few minutes before serving. Spoon any remaining sauce from the skillet over the pork chops.
