In a medium-sized bowl, combine the chia seeds, almond milk, and a pinch of salt. Stir well to ensure all the seeds are fully submerged and beginning to absorb the liquid.
Add the maple syrup to the mixture (if using) and stir again to distribute the sweetness evenly.
Cover the bowl and place it in the refrigerator to set for at least 2 hours, or overnight for a thicker texture.
Once the pudding has set, give it a good stir. This will break up any clumps and ensure a smooth consistency.
Serve the chia seed pudding in bowls or glasses. Layer sliced kiwi on top, then sprinkle the toasted shredded coconut evenly over the kiwi slices.
