In a medium-sized bowl, combine 1/4 cup of chia seeds, 1 cup of almond milk, 1 teaspoon of vanilla extract, and 1 tablespoon of erythritol. Whisk together until well combined.

Let the mixture sit for about 5 minutes, then whisk again to ensure the seeds are evenly dispersed and not clumping together.

Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, or overnight for best results. The pudding will thicken as the chia seeds absorb the liquid.

After chilling, remove the pudding from the refrigerator and stir well. If the pudding is too thick, you can add a little more almond milk to reach your desired consistency.
