Ingredients

  • 12 tbsp chia seeds
  • 6 cups unsweetened almond milk
  • 4 whole kiwi
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup pumpkin seeds
  • 2 tbsp maple syrup
  • 1/4 tsp salt

Instructions

In a large mixing bowl, combine the chia seeds, unsweetened almond milk, maple syrup, and a pinch of salt. Stir well to ensure the chia seeds are evenly distributed in the liquid.

Cover the mixture and refrigerate for at least 8 hours, or overnight, to allow the chia seeds to absorb the liquid and thicken.

Toast the shredded coconut by placing it in a dry skillet over medium heat. Stir frequently for about 3-4 minutes, or until golden brown. Remove from heat and set aside to cool.

Peel and dice the kiwis into small cubes and set aside.

Once the chia pudding is set, give it a stir to check the consistency. Add more almond milk if you prefer a thinner consistency.

Divide the chia pudding into individual serving bowls or jars. Top with diced kiwi, toasted coconut, and a sprinkle of pumpkin seeds.
