Preheat the oven to 325°F (165°C).
Season the pot roast with salt and black pepper.
Heat olive oil in a large pot over medium-high heat and brown the pot roast on all sides.
Remove the roast and add chopped onion and garlic to the pot, sautéing until softened.
Return the pot roast to the pot and add beef broth, carrots, and potatoes.
Cover and transfer to the oven, cooking for about 2 hours or until the meat is tender.
Remove from the oven and let it rest before slicing.
