In a large mixing bowl, whisk together flour, salt, and baking powder.
Add softened butter or fat of choice and work it into the flour until you have a sandy/fine crumb mixture.
Pour hot water into the dough a little at a time until a sticky dough ball forms.
Knead for 5 minutes until soft, elastic, and smooth.
Portion your dough into 10 round portions.
Place dough balls on the oiled baking sheet and cover with oiled plastic wrap and rest at room temperature for 20-30 minutes.
Preheat a griddle or large pan to medium high heat.
Roll out each dough ball until thin using a rolling pin and a ziplock bag with the sides cut off.
Cook in the griddle or skillet for 3 minutes on each side.
Keep the cooked tortillas wrapped in foil or covered while waiting for the rest of the dough to cook.
