Preheat the oven to 200°C (400°F).
Prepare the herb chimichurri by finely chopping the parsley, oregano or cilantro, and garlic cloves. Combine them in a bowl with 1 tablespoon olive oil, the red wine vinegar, salt, and pepper. Mix well and set aside.
Place the halved carrots on a baking sheet, drizzle with 1 tablespoon olive oil, and season with salt and pepper. Toss to coat evenly.
Roast the carrots in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring once halfway through.
While the carrots are roasting, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season the lamb chops with salt and pepper on both sides.
Add the lamb chops to the skillet and sear for 3-4 minutes on each side, or until they reach the desired level of doneness. Remove from the skillet and let them rest for 5 minutes.
In the same skillet, add the fresh spinach, season with salt and pepper, and sauté for 2-3 minutes until wilted.
Serve the lamb chops topped with the herb chimichurri, alongside the roasted carrots and sautéed spinach.
