Preheat your oven to 200°C (400°F).
Place the halved carrots on a baking sheet. Drizzle 1 tablespoon of olive oil over them, season with salt and pepper, and toss to coat. Spread the carrots out in an even layer.
Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized, turning halfway through.
While the carrots are roasting, prepare the herb chimichurri. In a small bowl, combine the chopped fresh parsley, oregano or cilantro, minced garlic, red wine vinegar, 2 tablespoons of olive oil, salt, and pepper. Stir thoroughly to blend the flavors.
Season the lamb chops with salt and pepper. Heat a grill pan or skillet over medium-high heat. Add the lamb chops and sear for about 3-4 minutes on each side for medium-rare (depending on the thickness). Adjust time for preferred doneness.
Once the lamb is cooked to your liking, transfer it to a plate. Let it rest for about 5 minutes to allow the juices to redistribute.
In a separate pan, heat a small drizzle of olive oil over medium heat. Add the spinach and sauté for about 2-3 minutes until wilted. Season with a pinch of salt and pepper.
Serve each lamb chop with a generous spoonful of chimichurri on top, alongside the roasted carrots and sautéed spinach.
