Ingredients

  • 3 medium potatoes
  • 2 cups milk
  • 400 g pork
  • 2 medium tomatoes
  • 100 g cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic
  • 1 medium onion
  • 3 cups chicken broth
  • 1/4 cup fresh parsley

Instructions

Peel and dice the potatoes into small cubes. Set aside.

Dice the pork into bite-sized pieces. Season with salt and pepper.

In a large pot, heat the olive oil over medium heat. Add the pork and cook until browned on all sides. Remove the pork from the pot and set aside.

In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent.

Add diced tomatoes to the pot and cook for another 2-3 minutes until they soften slightly.

Return the pork to the pot along with the diced potatoes. Pour in the chicken broth. Bring to a boil, then reduce the heat to a simmer. Cook for about 15-20 minutes or until the potatoes are tender.

Meanwhile, grate the cheese and finely chop the parsley.

Once the potatoes are tender, stir in the milk and let the soup heat up without boiling.

Add the grated cheese to the soup and stir until melted and well combined.

Adjust the seasoning with more salt and pepper, if needed. Stir in the chopped parsley.

Serve the soup hot, garnished with extra parsley if desired.
