Peel and dice the onion, carrots, and potatoes into small chunks.
Heat the olive oil in a large pot over medium-high heat. Add the stewing beef, seasoned with salt and pepper, and sear until browned on all sides. Remove beef and set aside.
In the same pot, add the onions and cook until translucent, about 3 minutes.
Add the carrots and potatoes to the pot and sauté for another 2-3 minutes.
Stir in the tomato paste and cook for 1 minute to allow the flavors to blend.
Return the beef to the pot and add the low-sodium beef stock. Bring to a boil, then reduce heat to a simmer. Cover and cook for approximately 50 minutes or until the beef and vegetables are tender.
Adjust seasoning with salt and pepper to taste.
Serve the stew hot in bowls with the whole-grain roll on the side for dipping.
