Dice the lean stewing beef into 1-inch cubes. Season with salt and black pepper to taste.
Peel and chop the potatoes into small bite-sized pieces. Slice the carrots into thin rounds. Finely chop the onion.
Heat the olive oil in a large pot over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove the beef and set aside.
In the same pot, add the chopped onion and sauté until translucent.
Stir in the tomato paste, cooking for an additional minute to enhance the flavor.
Return the beef to the pot, and add the chopped carrots and potatoes.
Pour in the low-sodium beef stock and bring the mixture to a gentle boil.
Reduce the heat, cover the pot, and let it simmer for about 60 minutes until the beef is tender and the vegetables are cooked through. Stir occasionally.
Season with additional salt and pepper if needed. Remove from heat and let it sit for a few minutes before serving.
Serve the stew hot with whole-grain roll on the side.
