In a mixing bowl, combine the drained canned tuna and 1 tablespoon of mayonnaise or Greek yogurt. Mix well to ensure the tuna is coated evenly.
Add 1/4 teaspoon of salt and 1/8 teaspoon of black pepper to the tuna mixture. Stir to combine.
Place 1 lettuce leaf on one slice of whole-grain bread. Spoon the tuna mixture on top of the lettuce, spreading it evenly.
Add 2 slices of tomato on top of the tuna mixture. Place the second lettuce leaf over the tomatoes.
Top with the second slice of whole-grain bread. Press down gently to secure the sandwich contents.
Cut the sandwich in half diagonally for easy handling and a nice presentation.
Serve the sandwich on a plate with the carrot sticks on the side for a crunchy, healthy accompaniment.
