In a small bowl, combine the drained canned tuna and light mayonnaise. Mix well until the tuna is well-coated. Season with salt and pepper to taste.
Lay one slice of whole-grain bread on a plate. Layer it with one leaf of lettuce and two slices of tomato.
Spoon half of the tuna mixture on top of the tomato slices. Then, place the second leaf of lettuce and the remaining two slices of tomato over the tuna mixture.
Top with the second slice of whole-grain bread. Press down gently to form a sandwich.
Cut the sandwich diagonally for easier handling and serve on a plate.
Arrange the carrot sticks on the side of the plate to serve as a fresh and crunchy side dish.
