Begin by cooking the turkey bacon. Heat a non-stick skillet over medium heat and add 1 teaspoon of olive oil. Once the skillet is hot, add the bacon slices and cook until crispy, about 4-5 minutes per side. Remove from the skillet and set aside on paper towels to drain excess oil.
While the bacon is cooking, prepare the avocado. Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash the avocado with a fork until smooth. Season with salt and pepper to taste.
Toast the whole-grain bread slices until golden brown. This can be done in a toaster or under a broiler in your oven.
Wash the lettuce leaves and tomato. Slice the tomato into thin slices.
Assemble the sandwiches. Spread a thin layer of light mayo on two slices of toasted bread. On one slice, add a layer of mashed avocado, followed by 2 oz of sliced turkey breast, a piece of crispy turkey bacon, a lettuce leaf, and some tomato slices. Top with another toasted bread slice.
Repeat the assembly process to make a total of 3 sandwiches, using all the bread and ingredients. Cut each sandwich in half diagonally to create six pieces.
Peel the carrot sticks and cut them into smaller sticks suitable for dipping, if not already done.
Serve the turkey and avocado club sandwiches with the carrot sticks on the side. Enjoy your meal!
