In a bowl, whisk together the 3 eggs, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper until fully combined and slightly frothy.
Heat 1 tablespoon of olive oil in a medium non-stick skillet over medium heat.
Add 1 cup of spinach to the skillet. Sauté the spinach for about 2 minutes, until it is wilted.
Spread the wilted spinach evenly over the pan. Pour the whisked eggs into the skillet, ensuring they evenly coat the spinach.
Allow the eggs to cook undisturbed for about 2-3 minutes, or until the edges begin to set and the bottom is golden brown.
Sprinkle 1/4 cup of feta cheese evenly across the omelette.
Using a spatula, gently lift one side of the omelette and fold it over to the other side, encasing the feta cheese inside.
Continue cooking for an additional 1-2 minutes until the cheese is slightly melted and the eggs are fully cooked through.
