  • 3 large eggs
  • 1 cup spinach
  • 0.25 cup feta cheese
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

In a bowl, whisk together the 3 eggs, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper until fully combined and slightly frothy.

Heat 1 tablespoon of olive oil in a medium non-stick skillet over medium heat.

Add 1 cup of spinach to the skillet. Sauté the spinach for about 2 minutes, until it is wilted.

Spread the wilted spinach evenly over the pan. Pour the whisked eggs into the skillet, ensuring they evenly coat the spinach.

Allow the eggs to cook undisturbed for about 2-3 minutes, or until the edges begin to set and the bottom is golden brown.
