In a bowl, whisk together the 2 whole eggs and 2 egg whites. Season with a pinch of salt and a dash of black pepper. Set aside.
Heat 1 teaspoon of olive oil or butter in a non-stick skillet over medium heat.
Add the sliced mushrooms to the pan and sauté for 3-4 minutes, or until they are soft and have released their moisture.
Add the spinach to the pan with the mushrooms and cook for another 1-2 minutes until the spinach is wilted.
Pour the beaten eggs over the spinach and mushrooms in the pan. Tilt the pan gently to spread the eggs evenly.
Cook the omelette for 3-4 minutes, or until the edges start to set. Don’t stir the eggs but rather gently shake the pan occasionally to ensure even cooking.
Sprinkle the crumbled feta cheese over one half of the omelette. Fold the other half over the cheese to enclose the filling.
Let the omelette cook for another 1-2 minutes until the cheese starts to melt. Slide the omelette onto a plate.
Toast a slice of whole-grain bread until golden brown.
Serve the omelette with the toast on the side. Enjoy your meal!
