Ingredients

  • 2 units large eggs
  • 1 unit egg white
  • 30 g crumbled feta
  • 50 g fresh spinach
  • 50 g small tomato, diced
  • 1 tsp olive oil
  • 1 slice whole-grain toast
  • to taste n/a salt
  • to taste n/a pepper

Instructions

In a small bowl, beat together the 2 large eggs and 1 egg white until well combined. Season the egg mixture with a pinch of salt and pepper.

Heat 1 teaspoon of olive oil in a non-stick frying pan over medium heat.

Add the fresh spinach to the pan and sauté for 1-2 minutes, or until it is wilted.

Add the diced tomato to the pan, and cook for another 1 minute, just to warm the tomatoes.

Pour the egg mixture into the pan, and gently stir to distribute the spinach and tomatoes evenly.

Sprinkle the crumbled feta cheese over the eggs.

Continue cooking the omelette for 3-4 minutes, or until the eggs are set and the bottom is lightly golden. Carefully flip the omelette over and cook for an additional minute to ensure the cheese is melted.

While the omelette is cooking, toast the whole-grain slice of bread until golden brown.

Serve the cooked omelette with the whole-grain toast on the side. You may add additional salt and pepper to taste.
