Preheat the oven to 200°C (400°F).
Peel and cut the sweet potato into 1-inch cubes.
Place the sweet potato cubes on a baking sheet, drizzle with half of the olive oil, and season with salt and pepper. Toss to coat evenly.
Roast the sweet potatoes in the preheated oven for 15 minutes.
While the sweet potatoes are roasting, trim the ends of the green beans.
In a small bowl, mix the minced garlic, lemon juice, and remaining olive oil. Season with salt and pepper. Set aside.
After 15 minutes, add the green beans to the baking sheet with the sweet potatoes, drizzle with a little of the garlic lemon olive oil mixture, and toss to combine. Return to the oven for an additional 10 minutes.
Season the salmon fillet with salt, pepper, and half of the remaining garlic lemon olive oil mixture. Place the salmon fillet on another baking sheet or in an ovenproof dish.
Add the salmon to the oven along with the vegetables and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
Once done, remove the salmon and vegetables from the oven. Serve the baked salmon with roasted sweet potatoes and green beans, drizzled with the remaining garlic lemon olive oil mixture. Garnish with fresh dill or parsley.
