Ingredients

  • 8 oz Penne pasta
  • 1 lb Lean ground turkey
  • 2 cups Marinara sauce
  • 1 cup Part-skim mozzarella cheese
  • 4 cups Fresh spinach
  • 1 medium Onion
  • 3 cloves Garlic
  • 2 tbsp Olive oil
  • to taste n/a Salt
  • to taste n/a Black pepper

Instructions

Preheat the oven to 375°F (190°C).

Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

While the pasta is cooking, chop the onion and mince the garlic cloves.

In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

Add the lean ground turkey to the skillet. Cook until the turkey is no longer pink, breaking it apart with a spatula, about 7-8 minutes.

Add the fresh spinach to the skillet and stir until wilted, about 2 minutes.

Pour the marinara sauce into the skillet. Stir to combine and let it simmer for 5 minutes. Season with salt and black pepper to taste.

In a large baking dish, combine the cooked penne pasta with the turkey and spinach mixture. Mix well to distribute evenly.

Sprinkle the part-skim mozzarella cheese evenly over the pasta mixture in the baking dish.

Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let it cool for a few minutes before serving.
