Preheat the oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add lean ground turkey to the skillet, season with salt and black pepper, and cook until browned, about 5-7 minutes. Break it into smaller pieces with a spatula as it cooks.
Stir in the fresh spinach and cook for another 2-3 minutes until wilted.
Add the marinara sauce and Italian herbs to the turkey and spinach mixture. Stir well to combine and let it simmer for about 2 minutes.
Combine the cooked penne with the turkey and sauce mixture in the skillet. Stir well to ensure the pasta is coated evenly with the sauce.
Transfer half of the pasta mixture into a baking dish. Spread the ricotta cheese over the layer of pasta.
Top with the remaining pasta mixture and evenly sprinkle the shredded mozzarella cheese on top.
Bake in the preheated oven for 15-20 minutes until the cheese is melted and golden brown.
Let the baked ziti cool for a few minutes before serving. Enjoy!
