Baked Ziti with Turkey Sausage & Spinach

Ingredients

  • 8 oz ziti or penne pasta
  • 8 oz turkey Italian sausage
  • 2 cups marinara sauce
  • 1.5 cups part-skim ricotta
  • 1 cup shredded mozzarella
  • 2 cups fresh spinach
  • 1 tbsp olive oil
  • 0.25 cup grated Parmesan
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 3 quarts water

Instructions

Preheat the oven to 375°F (190°C). Bring a large pot of salted water (3 quarts of water and 1 teaspoon of salt) to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the turkey Italian sausage (casings removed) and cook until browned, breaking it into smaller pieces with a spatula, about 5-7 minutes.

Add the fresh spinach to the skillet with the sausage and cook until wilted, about 2 minutes. Remove from heat.

In a large mixing bowl, combine the cooked pasta, turkey and spinach mixture, 2 cups of marinara sauce, and 1.5 cups of ricotta cheese. Stir until well combined. Season with 1/2 teaspoon of black pepper.

Transfer the pasta mixture to a 9x13 inch baking dish. Sprinkle 1 cup of shredded mozzarella cheese evenly over the top.

Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

Remove from the oven and sprinkle with 1/4 cup of grated Parmesan cheese. Allow to cool for a few minutes before serving.
