Baked Ziti with Turkey, Spinach & Simple Green Salad

Ingredients

  • 8 oz ziti or penne (dry)
  • 12 oz lean ground turkey
  • 2 cups marinara sauce
  • 2 cups fresh spinach
  • 1 cup part-skim ricotta
  • 3/4 cup shredded mozzarella
  • 1 tbsp olive oil
  • 4 cups mixed greens
  • 1 tbsp balsamic vinaigrette

Instructions

Preheat your oven to 375°F (190°C).

Bring a large pot of salted water to a boil. Add the ziti or penne and cook according to package instructions until al dente, then drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the ground turkey, season with salt and pepper, and cook until browned and cooked through, about 7-9 minutes.

Add the marinara sauce to the cooked turkey and stir until well combined. Let it simmer for about 5 minutes, then remove from heat.

In a large mixing bowl, combine cooked pasta, turkey and marinara sauce mixture, chopped spinach, and ricotta cheese. Mix until everything is evenly coated.

Transfer the mix to a 9x13 inch baking dish. Sprinkle the shredded mozzarella evenly over the top.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. If desired, broil for an additional 2 minutes for a golden top.

While the ziti is baking, prepare the salad by tossing mixed greens with balsamic vinaigrette in a large bowl.

Once the baked ziti is done, remove from oven and let it cool for a few minutes before serving. Serve slices of baked ziti with the simple green salad on the side.
