Total: 20 minutes
Main CourseItalianVegetarian

Ingredients

  • 200 g pasta
  • 2 medium tomato
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 5 leaves fresh basil
  • 1/4 cup grated Parmesan cheese

Instructions

1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.

2

While the pasta is cooking, finely chop the garlic and dice the tomatoes.

3

In a large skillet, heat the olive oil over medium heat. Add the chopped garlic and sauté until fragrant, about 1 minute.

4

Add the diced tomatoes to the skillet, along with salt and black pepper. Cook for about 5-7 minutes, or until the tomatoes have broken down into a saucy consistency.

5

Add the cooked pasta to the tomato sauce in the skillet. Toss well to combine, adding reserved pasta water as needed to reach desired sauciness.

6

Chop the fresh basil and add it to the pasta, tossing to combine. Serve hot, topped with grated Parmesan cheese.
