Wash and peel the carrots, then grate them into thin shreds. Set aside.
Peel and finely chop the onion. Set aside.
In a medium-sized pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the grated carrots to the pot with the onions and cook for another 3 minutes, stirring occasionally.
Add the rice to the pot, stirring well to combine with the vegetables.
Pour in the water, add salt and black pepper, and bring the pot to a boil.
Once boiling, reduce the heat to low and cover the pot with a lid. Let it simmer for about 18-20 minutes, or until the rice is cooked and all the water is absorbed.
Turn off the heat and gently stir in the cheese until fully melted and combined with the rice mixture.
Taste and adjust seasoning if needed. Serve hot.
