Rinse the rice under cold water until the water runs clear, then drain well.
Peel and finely chop the onion.
Heat olive oil in a medium saucepan over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
Add the rice to the pan and stir, making sure the rice is well coated with the oil and onion mixture.
Pour in 2 cups of water, add salt and black pepper, and bring to a boil.
Once boiling, reduce the heat to a simmer, cover, and cook for 15 minutes or until the rice is tender and the water is absorbed.
Remove the pan from heat, and stir in the cheese until it is melted and thoroughly combined with the rice.
Let the rice sit for 5 minutes before serving to allow all flavors to meld together. Adjust seasoning with more salt and pepper if needed.
