Rinse the rice under cold water until the water runs clear. Drain and set aside.
Finely chop the onion.
In a medium saucepan, heat 2 tablespoons of olive oil over medium heat.
Add the chopped onion and sauté until translucent, about 5 minutes.
Add the rice to the onion and cook for 1-2 minutes, stirring frequently.
Pour in 2 cups of water, add 1 teaspoon of salt, and bring to a boil.
Reduce the heat to low, cover the pan, and simmer for 18-20 minutes until the rice is cooked and water is absorbed.
Grate the cheese while the rice is cooking.
Once the rice is done, remove it from heat and gently stir in the grated cheese and 1/2 teaspoon of black pepper until well combined.
Serve hot, garnished with additional cheese or herbs if desired.
