Preheat the oven to 200°C (392°F).
Peel and dice the sweet potato into 2 cm cubes. Place them on a baking sheet.
Drizzle half of the olive oil over the sweet potato. Add salt and pepper to taste. Toss to coat evenly.
Bake the sweet potato cubes in the preheated oven for 15 minutes.
While the sweet potatoes are baking, prepare the salmon. Mince the garlic and mix it with the remaining olive oil, juice from half a lemon, chopped dill or parsley, salt, and pepper in a small bowl.
Place the salmon fillet on a piece of aluminum foil lined with baking paper. Spoon the garlic and herb mixture over the fish evenly. Fold the foil to create a sealed packet.
After the sweet potato has baked for 15 minutes, add the green beans to the baking sheet with sweet potatoes. Drizzle some extra salt and pepper over the vegetables if needed.
Place the salmon packet on the baking sheet next to the vegetables. Bake everything in the oven for an additional 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.
Once cooked, remove the salmon from the foil. Serve the baked salmon alongside the roasted sweet potato and green beans, garnished with additional fresh herbs if desired.
