  • 200 g Whole wheat pasta
  • 1 cup Mixed vegetables (carrots, broccoli, bell peppers)
  • 2 tbsp Olive oil
  • 2 cloves Garlic

Instructions

1

Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.

2

While the pasta is cooking, warm 2 tbsp of olive oil in a large skillet over medium heat.

3

Add the garlic cloves, minced, to the skillet and sauté for about 1 minute until fragrant.

4

Add the mixed vegetables to the skillet and cook for about 5-7 minutes, or until they are tender-crisp, stirring occasionally.
