Bring a pot of salted water to a boil and cook the pasta (penne or farfalle) according to the package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the pasta and set aside.
In a large skillet, heat the olive oil over medium heat. Add the mixed vegetables (zucchini, bell pepper, and cherry tomatoes) and sauté for about 5-7 minutes until they're tender and slightly caramelized.
Add the sliced grilled chicken breast to the skillet with the vegetables and stir occasionally until the chicken is heated through.
Toss the cooked pasta with the vegetables and chicken in the skillet. Gradually add the reserved pasta water as needed to create a light sauce. Stir in the lemon zest.
Season with salt and black pepper to taste. Remove from heat and sprinkle the grated Parmesan over the pasta. Toss everything together gently.
Serve the pasta warm, garnished with extra Parmesan or lemon zest if desired.
