Ingredients

  • 2 cups Mixed vegetables (bell peppers, zucchini, carrots)
  • 2 cups Whole wheat pasta
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic
  • to taste tablespoons Parmesan cheese

Instructions

Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to the package instructions until al dente, about 8-10 minutes.

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant, making sure not to burn it.

Add the mixed vegetables to the skillet. Sauté for about 5-7 minutes, until the vegetables are tender but still crisp. Season with salt and pepper to taste.

Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.

Add the drained pasta to the skillet with the sautéed vegetables. Toss well to combine. If the mixture seems dry, add a little of the reserved pasta water until the desired consistency is reached.

Serve the pasta in bowls, topped with freshly grated Parmesan cheese to taste. Enjoy!
