In a medium bowl, mix the plain Greek yogurt with the vanilla extract until well combined.
In each serving glass or bowl, layer 1/4 of the granola (about 30 g per serving) as the base layer.
Add a layer of Greek yogurt (approximately 200 g per serving) over the granola.
Scatter a portion of mixed berries (about 75 g per serving) over the yogurt layer.
Drizzle 1/2 tbsp of honey over the berries in each serving.
Add another layer of yogurt (remaining from the 200 g per serving) if desired for additional height and creaminess.
Top with a second portion of granola and berries to finish the parfait.
Optionally, garnish with fresh mint leaves for a refreshing touch and serve immediately.
