Crack the eggs into a mixing bowl. Add salt, pepper, and turmeric. Whisk until well combined.
Heat 1 tsp of oil or ghee in a non-stick skillet over medium heat.
Add the mixed diced tomatoes, onions, capsicum, and the optional small green chili to the skillet. Sauté for about 2-3 minutes until the vegetables are slightly tender.
Pour the whisked eggs over the sautéed vegetables. Swirl the pan so that the eggs coat the bottom evenly.
Sprinkle chopped cilantro over the eggs. Cook until the edges begin to set, about 2 minutes.
Using a spatula, gently lift the edges of the omelette and tilt the pan to allow uncooked eggs to flow to the edges. Continue cooking until the top begins to set, about another 2 minutes.
Once cooked to your preference, gently slide the omelette onto a plate, folding it in half as you do.
In the same skillet, toast the slice of whole-wheat bread over medium heat until golden brown on both sides.
