  • 2 large Eggs
  • 1 small, chopped Tomato
  • 1/4 small, finely chopped Onion
  • 1 tsp Vegetable oil
  • 2 tbsp Low-fat yogurt
  • 1 slice Whole-wheat bread
  • 2 tbsp, chopped Fresh cilantro
  • 1/4 tsp Salt
  • 1/8 tsp, freshly ground Black pepper
  • 1 pinch Cumin

Instructions

In a small bowl, whisk together the eggs with a pinch of salt and pepper.

Heat 1 tsp of vegetable oil in a non-stick frying pan over medium heat.

Add the chopped onion to the pan and sauté for 2 minutes until it becomes translucent.

Add the chopped tomato to the pan and cook for another 2 minutes.

Pour the whisked eggs evenly over the sautéed onion and tomato in the pan.

Sprinkle a pinch of cumin and half the chopped cilantro over the eggs.

Cook the omelette for 3-4 minutes or until the eggs are just set. Use a spatula to fold the omelette in half. Cook for another minute and then transfer to a plate.

In a small bowl, mix the low-fat yogurt with a pinch of salt, pepper, and the remaining cilantro. This will be your spiced yogurt sauce.

Toast the slice of whole-wheat bread to your desired level of crispiness.
